Turla Turla aka Turkish Chickpea and Vege Stew
Turlu Turlu – An Anatolian take on ratatouille, Turla Turlu is Turkish for ‘allsorts’. This peasant-style dish is a combination of all kinds of seasonal vegetables baked with chickpeas. I’m not committing to the veggie combo of this one. The whole point is that it is made with the best on the day but expect sweet potato, butternut pumpkin, capsicum and my homemade tomato passata. This will serve one as a main or two as a side dish. Its great with grilled fish or a fried egg.
Reheat in the microwave or on the stove.
Ingredients: chickpeas, eggplant, sweet potato, onion, capsicum, carrot, beans, tomato, olive oil, parsley, cumin, ground coriander, garlic, salt and pepper.
