Thai Green Lentil Curry
This Thai-inspired green curry is so full of healthy goodness. It packed with plant-based protein and fibre from the lentils, organic steel-cut oats and vegetables, and equally big on (moderately) hot and sour Asian flavours. Coconut milk gives the whole meal a creamy yumminess so you won't even notice how good for you it is. The oats may seem like a strange addition but they add a great texture and thickness to the sauce, something that can be missing in a vegetarian curry. Enjoy with extra greens and rice if desired.
Defrost and reheat in the microwave or on the stove until hot.
