Pumpkin and Lentil Tagine
A truly delicious AND nutritious dinner. The earthy flavour of the whole red lentils combines with the sweetness of the butternut pumpkin, the flavours melding together with traditional Moroccan herbs and spices. This is one of the few vegan dishes of Morocco. Serve with crusty bread.
Reheat in microwave or on the stove until hot.
Ingredients: Butternut pumpkin, whole red lentils, tomato, onion, olive oil, harissa, tomato paste, garlic, cumin, ground and fresh coriander, paprika, sugar, salt, pepper.
