Pork Meatball and Passion fruit Stirfry
This is a bit like a pork sweet and sour, with the passion fruit juice providing the fruity sourness, mint providing the freshness and sweet spices and a little caramelised brown sugar adding the delicious sweetness. My passion fruit vine is producing about 25 passion fruit a day so I am always looking for new ways to use them. This meal is a real winner. Serve with rice, noodles or salad if desired.
Defrost and reheat in the microwave or gently on the stove until hot.
Ingredients: Pork, carrots, capsicum, broccoli, passion fruit pulp, garlic, ginger, chives, brown sugar, rice vinegar, sesame oil, soy sauce, spices, mint.
