Mushroom Curry with Cauliflower, Spinach and Coconut
This dish isn't your typical curry - it is not particularly hot, nor is it heavily spiced. It's deliciousness is in the simplicity with the clean flavours of mushrooms, coconut milk and spinach. A sprinkling of fresh coriander or mint at home would add a little extra freshness, if desired. Though you would normally serve this with steamed rice, I have included it in the pasta sauce range because I think pasta would be an equally good alternative.
Defrost and reheat. Serve with rice or pasta and a sprinkling of fresh coriander if desired.
