Moroccan Chicken with Apricots
Remember apricot chicken? Well this is a sophisticated reworking of that dish, full of exotic Moroccan aromas, fabulous flavours and fresh apricots straight off our apricot tree. Unlike the apricot chicken of old, this version is fresh, fragrant and not at all sweet. As you know, the apricot season only lasts so long so, but I had some apricots from our tree in the freezer. So this is your chance to relive summer - you won't see it again until next year.
Defrost and reheat in the microwave or on the stove until hot.
Ingredients: chicken, apricots, onions, coriander, mint, parsley, chilli, garlic, spices, chicken stock, honey, lemon juice, brown sugar, olive oil, salt and pepper.
