Malaysian Beef Curry with Vegetables


This would have to be one of my favourite curries - succulent, soft, beef chunks in a rich coconutty fragrant sauce. In keeping with my goal to offer more vegetables, I have added seasonal vegetables to this rich meat curry which is little bit saucy, a little bit spicy and very big on flavour. Serve with fluffy rice and a squeeze of lemon.

Defrost and reheat in microwave or on the stove until hot.

Ingredients: beef, vegetables, coconut milk, onion, tamarind, garlic, ginger, galangal, chilli, turmeric, ground coriander, curry leaves, star anise, lemongrass, sugar, lime leaves and zest.
