Eggplant and Sweet Potato Curry


Packed full of hearty vegies, this tasty, medium spicy, egglant, sweet potato and coconut curry is perfect for a yummy vegetarian dinner. With creaminess from the eggplant and  sweetness from the sweet potatoes simmered in the sweet-and-sour spicy coconut curry sauce, this curry has all the delicious flavours of Southern India.  Unlike many curries, this one doesn't have coriander. So if you are someone with a coriander aversion, this one may be for you.

Add rice or naan for a complete dinner.

Defrost and reheat.

Ingredients: Eggplant, sweet potato, leeks, onions, garlic, ginger, curry leaves, coconut milk and oil, vegetable stock, tamarind paste, chilli, spices, lemon juice, salt and pepper.
