Cheese, Spinach and Mushroom Triangles
I have modified my usual classic Greek cheese and spinach filo pie to make a pair of cheese, spinach and mushroom triangles, perfect for reheating. These are a fabulous combination of flavours: leafy greens, dill and chives with a creamy mix of cheeses enveloped by crispy, flaky filo pastry. Serve with a crisp garden salad.
Reheat from frozen in a moderately hot oven for about 15 minutes or until browned and heated through in the middle. Not suitable to microwave.
Ingredients: Mixed greens (can include chard, silver beet, spinach and kale), mushrooms, onion, mint, parsley, dill, chives, feta, cheddar and cottage cheese, filo pastry, butter, salt and pepper.
