Loaded Sweet Potato with Satay Vegetables


I have been experimenting with Gado Gado ideas for a while now and I think this interpretation of the classic Indonesian peanut and vegetable salad is pretty good. I wouldn't call it authentic, but the key elements - lots of roasted and steamed veges and a mildly spiced crunchy peanut sauce, piled on top of a buttery roasted sweet potato (that's the new bit) - are there.  This is a delicious way to get your daily vegetable requirements. Perfect for lunch or a light dinner 

Defrost and reheat.

Ingredients: Cauliflower, sweet potato, broccoli, kale, capsicum, beans, snow peas, onion, peanuts, coconut milk, coconut oil, shallots, garlic, tamarind, kaffir lime leaves and zest, sambal oelek, salt, miso, Kecap Manis, brown sugar, lemon juice.
