Minted Lamb with Cider and Seasonal Vegetables

Lamb and mint is a classic combination and this was the first dish I ever invented for the Australian Women's Weekly. Slow cooking in Tasmanian apple cider brings out the melting deliciousness of the lamb and the baby onions, peas and carrots add healthy veggies making this an almost complete meal.  Wonderful served on creamy mash. 

Defrost completely and reheat in the microwave or on stove until hot.

Ingredients: lamb, onion, apple cider, chicken stock, vegetables, corn flour, mint, peas, carrots, white wine, salt, pepper.
