Black Bean and Vegetable Enchiladas


Spicy and hearty, these enchiladas see corn tortillas stuffed with a mixture of black beans, garden vegetables and feta cheese and blanketed in a homemade red enchilada sauce topped with oozy mozzarella cheese. 

Defrost and reheat in the microwave or oven until hot.

Ingredients: Sweet potato, black beans, feta and mozzarella cheese, vegetables, tomatoes, garlic, jalapeno peppers, coriander, parsley, corn tortillas, olive oil, spices, salt and pepper.
